Xanthan Gum is a natural carbohydrate produced by a tiny micro-organism called Xanthomonas Carmpestris. It can be used as a substitute for gluten by giving volume & structure to breads, pastries & other gluten-free baked goods. It can also be added to salad dressings, gravies, sauces & even ice cream to give a creamy smooth texture.
