It turns black when added to water. the colour is due to the presence of beneficial bacteria & decomposed palnt matter which create beta-carotene - an anti-oxidant & source of Vit A. It contains sulphur making it a wonderful food seasoning & flavour enhancer. It is loaded with other minerals & trace elements & is a staple seasoning throughout Asia.
